Writing a Business Plan for a Restaurant
Whether you have already started a restaurant but are unhappy with it or are planning to open your Restaurant, writing a Business Plan is the right place to start.
Attention, do not take
this task lightly, but above all, do not rely on those who have never managed a
slush kiosk.
A badly drafted
Business Plan by those without experience in our sector can harm your
business.
Therefore, in this
article, I will explain how to do it best, avoiding contacting generalist
consultants who know very little about restaurants and clubs.
What is a Business Plan?
If you browse this
encyclopedia, you can read that the Business Plan is a document.
It is used for
business planning, management, and external communication, particularly with
potential lenders or investors. "
This business plan
definition is correct but generalized to every type of activity. For this
reason, I have coined a definition of Business Plan for Catering, therefore
specific for our sector:
"The Business Plan
is the nautical map of your place: it shows the sustainability of your project,
defines what you do and the" meaning "of your place, clarifies which
objectives to achieve, and identifies the means, resources, and numbers thanks
to which you will achieve these objectives."
For this reason, a
well-researched and detailed business plan will allow you to maximize your
earnings, reduce waste, and give your company a guideline.
What can you do without a Business Plan for your Restaurant?
Would you ever drive a
boat without nautical charts, onboard instruments, and above all, knowing
exactly where you are going?
Not.
So, know that if you
don't have a Restaurant Business Plan (or worse - you have one badly done), it is
as if you put yourself into the sea blindly, with a boat in bad shape and full
of leaks.
Thanks to the Business
Plan, you will be able to keep your numbers under control, understand if the
direction taken by your Restaurant is the most profitable, and if not, you will
be able to correct the shot.
But without a Business
Plan for your Restaurant, all this will be impossible, and you will always have
to rely on "sensations" and not on numbers, actually going blind.
Who should write the Business Plan for your Restaurant?
If you have really
understood the usefulness of the Business Plan for your Restaurant now, we are
at a crucial question.
Can you delegate the
drafting of your Business Plan?
To this question, too,
the answer is no.
In fact, from my point
of view, the activities that you cannot delegate to anyone are that of
Marketing (since it is thanks to Marketing that you can fill your premises) and
that of Management Control (because only if you can keep an eye on the numbers
of your company, then you can intervene to make it more profitable).
Problem
In this part, you will
need to indicate which problem you solve with your offer.
But remember that the
problem is never "feeding the customer." Instead, try to ask what you
are doing (or are you going to do) for your customers.
Solution
In this section that
you will fill in after finding the problem, you will need to indicate how you
intend to solve it.
Special evenings, a
specific format. In short, you will have to find the most suitable solution.
For example, my
Restaurant has a weekly program designed to offer my customers evenings full of
fun to solve the problem I have already told you about.
Offered Value
Here you will simply
have to enter the products and services you will offer your customers as a
solution to their problems.
Remember that it is
not a menu, so in addition to the dishes, I recommend that you include the
service and all the procedures that your staff will have to put in place to
make the customer perceive a value that exceeds his expectations.
Key Metrics
In this section, you
will have to enter all the assets (equipment and people) necessary to make your
company work.
The kitchen equipment,
the number of people included in the staff, and all the tools to do marketing
and acquire more and more new customers, such as the digital agenda, the CRM,
the switchboard, etc.
Channels
Here instead, you will
have to indicate the channels with which you intend to reach customers:
sponsored social networks, emails, and newsletters, telephone actions,
leaflets, paper coupons. In short, indulge yourself.
Costs
Here you simply have
to enter the costs that your venue will have to incur to be functional:
- fixed costs;
- food cost;
- beverage cost;
- staff Price;
- marketing budget.
Revenues and Benefits
Instead, in this last
section, you will have to indicate your turnover objectives to understand how
much to collect to generate the desired margin and adapt the entire Business
Plan accordingly.
This is one of the
most strategic sections, and it is on its setting that a large part of your
margins will depend.
Conclusions
This article does not
pretend to be exhaustive, but it does want to give you a general smattering
that allows you to start setting up your Business Plan (if you don't have it
yet); or if you have, it will allow you to check if it is written well and if
there is any improvement to be made.
Writing it well has to
take into account several variables, which require years of experience to be
understood, internalized, and applied correctly to your business.
And since there is no
structured course that teaches restaurateurs like us to draw up, monitor, and
correct the Business Plans of our premises, I have decided to spare you the
effort by creating a complete Digital Course that deals exclusively with this
topic.
So, I created
Restaurant Plan in which not only will I talk to you in-depth about the
Business Plan, how to best write it, and how to avoid all the most common
mistakes.
We will also discuss
how a market analysis is done, what tools you have at your disposal, and how
you can increase Revenue using concrete examples.
At the end of the
4-hour course, you will have learned everything you need, and you can get to
work on drafting, correcting, and improving your Business Plan.
